Very Berry Yogurt Breakfast Parfait

output_3zSNhjTake a second to think of your favorite quick breakfast that you enjoy eating most on those days when time is just not on your side. It may be a simple egg on toast (or avocado toast, as that is all the rage) or maybe a yummy smoothie bowl, but usually in my case I like to keep it simple with a bowl of cereal, as I find it hard to resist the combination of sweet crunchy cereal and super cold milk (am I right??)

Lately, however, I’ve been looking for ways to shake things up just a bit, as no one likes to get stuck in a breakfast rut, and also try and incorporate some extra nutrients and thought that a great way to do this would be to make an overnight yogurt breakfast parfait and put it all in a mason jar so that it could be easily grabbed during those on-the-go moments.

Fruits, especially berries, always made an appearance in the house the moment the first signs of spring began showing itself, which is why I think I’m such a fruit addict today. And I decided to use the Easy Homemade Granola recipe that I made a while back because I thought it would go well with all of the other flavors.

I prefer making it the night before so that its ready to go in the morning and it also allows the ingredients to marry into a bright, flavorful, beautiful combination of sweet berry juices, tangy yogurt, slippery chia seeds, and yummy oats from the granola that have soaked up all of this deliciousness.

I think parfaits are definitely going to become one of my go-to meals when I’m looking for something fast and healthy, but I’ll probably always be a cereal gal at heart ๐Ÿ˜‰

Very Berry Yogurt Breakfast Parfait

Ingredients

  • 1/4 cup of strawberries
  • 2 tablespoons of raspberries
  • 2 tablespoons of Blueberries
  • 2 tablespoons of Blackberries
  • 5oz cup of Plain Greek Yogurt (or any yogurt of your choosing)
  • 1/4 cup of granola
  • 1 tablespoon of chia seeds, optional

Preparation

  1. Layer the strawberries, yogurt, chia seeds, granola, blueberries, blackberries, and raspberries in a mason jar and allow to refrigerate overnight.
  2. Enjoy!
