I just wanted to share a recipe I used the other day to make some banana nut muffins. I seem to always have at least a few bananas left over and instead of throwing them out (what a waste!) I instead find ways to experiment with new recipes. My go-to option is usually banana bread, but I wanted to mix it up a bit and try something new. I also wanted to make the muffins a little healthier, so I googled some recipes that used whole wheat flour and stumbled upon this one:
It seemed easy enough, but to make it my own, I made a few alterations: I added just a tiny bit of sugar because this one only asked for pure maple syrup. I also added some blueberries to half of the batch for a little tartness, as well as about 1/2 teaspoon of cinnamon and 1/8 teaspoon of ground clove and some gluten-free quick cooking oats and…
